I didn't use the cooking instructions, I cooked for eight hours at 80c then turned up to 120 for two hours and 180 for another hour +. That was the best turkey I have ever cooked it was delicious (everyone said so). We did have a lot left over so I used the leftover turkey pie recipe and we got eight very generous pies to freeze and eat later. Herb fed turkey are very good.
