I bought a box of cacao pods so that I in Michigan, food editor John Lehndorff in Colorado and two scientists could begin to understand what happens aromatically when cacao is processed into chocolate. I did a lot of internet searches and came fairly close to duplicating the fermentation, drying and roasting of the bean, considering we are thousands of miles away from cacao growing regions.
