I bought a box of cacao pods so that I in Michigan, food editor John Lehndorff in Colorado and two scientists could begin to understand what happens aromatically when cacao is processed into chocolate. I did a lot of internet searches and came fairly close to duplicating the fermentation, drying and roasting of the bean, considering we are thousands of miles away from cacao growing regions. Thanks for the opportunity.
