So far as I am aware, there are only two brands that offer organic, soya-free, unpasteurised miso past in the United Kingdom––this being the first that I was able to find several years back.
The textue of this miso is incredibly light, silky, and velvety smooth.
Its flavour is super fresh without being overpowering.
As such, it easily leds itself quite well to a rather wide variety of applications.
As a raw/living foods chef/instructor I have found a vast array of uses for this product and love to experiment with using it for loads of interesting experiments which always seem to yield incredibly delicious results (please see attached photos for specific examples, or feel free to visit our site at https://Veganarchist.kitchen).
The big, sturdy, glass jar is absolutely wonderful, and I love to reuse these for storage of various things once I finish up with the paste inside.
With all of that having been said, I do feel as if the price is somewhat hefty.
As such, my partner and I often opt for a slightly simpler, more strongly flavoured organic chickpea miso offered by another company which imports theirs from Japan.
Although I prefer this product to the other, we are presently debating whether or not to switch over entirely to the Japanese product––largely due to issues with their website being somewhat dodgy on a regular basis, as well as full automation of Navi's customer care facilities to what feels like an A.I. modality.
If we could still contact them via telephone (or quickly sort issues via live chat from time to time) we would happily stick with this product whenever it seemed most affordable.
