I'm a hydroponic grower of kale, lettuce & dwarf tomatoes for fresh homegrown produce and emergency prepping. However, this method takes several months to produce edibles, so this is where microgreens come in. You can have fresh, organic (and delicious) greens to eat in a matter of 7-14 days with microgreens. By staggering several bins of microgreens, you can produce reliable greens to enjoy every day. It's quite easy (and fun), but the best part is that Todd is so responsive. I had several questions on my first attempt, and he replied with answers/suggestions many times the same day! Customer service doesn't get better than that. Give it a try. The photo of my first bin of kale was taken 5 days after germination. Should be ready to harvest and eat in another 5!
