This is my first order with Augason Farms and I was looking forward to using these potatoes for scalloped potatoes. The bucket came in about 10 days and was well packed in a extra thick card board box.I opened the bucket right away and its very full almost to the top which is a good thing but to my surprise I wouldn't call these sliced potatoes since it was mostly broken very small pieces, about 90 percent of the bucket was this way, very few sliced potatoes inside. Won't be able to use them for scalloped potatoes, would be great in soups. Since the bucket was so full I know it was packed that way maybe I got the bottom of the bag. Still a good value and I would order again.

We received the pail of potato slices about a week after ordering. We just opened it tonight and transferred most of the product into a mylar bag and another 6 gallon pail. To place a gamma lid on the pail with the mylar bag we had to leave about 3/4 of a gallon in the original container due to space requirements. I took about 4 cups and placed in a bowl and rehydrated with water for about 20 minutes to hydrate the product as labeled by Augason Farms instructions. I then made a white sauce for scalloped potatoes and then layered it using the sauce and additional cheeses along with 1/2 a cup of half ringed onions and 2 cups of ham chunks. I baked it for 45 minutes at 350 degrees. This turned out great, the potatoes still had a crisp texture but not hard. We will be finding many ways to use these potato slices in the future. This is a fantastic product and we will be ordering a second pail this week. The actual recipe is as follows:
