“Almost like sugar, but not quite. Here are my complaints:1) It's wayyyyy too expensive.2) It doesn't "burn" or crystalize like regular sugar will. This means using it to make some dishes is not going to work.3. For me, it had a slight gastrointestinal effect, albeit a lot less so than some sugar alcohols.4. It has a subtle cooling effect.5. It's about 75% as sweet as regular sugar in my opinion.6. I'm highly suspicious of the company putting "pentose" on the ingredient label. That is too vague. Pentose is a broad term for five carbon molecule sugars ribose, adenose D-xylose, Xylose, Xylulose, and others, but the company doesn't say which it's derived from.In the end, it's the best sugar replacement I've ever had but, like most connoisseurs will tell you, a combination of sugar replacements, each unique for the particular task, is likely the conclusion you will come to.”
