“I scored the fat and marinaded in orange juice, hoi sin, honey and brandy and then BBQ'ed fat side down until the fat is crisp (cover while the fat side is down to reduce flare ups) and then flip for 60 seconds. The marinade can be simmered to make a sauce.”
