Santoku knife with hollow ground/granton edge. The scalloped grooves on the sides of the blade edge helps with reducing friction and sticking of foods.
“Very nice balance and sharpness. But a very gentle bit of contact caused it to chip. When I contacted customer service they basically said too bad. So while this is a good knife it is too delicate for me to recommend for ordinary use.”
