“Preparation directions say 145 internal for Medium but this does not take into account that meat will rise at least 5 degrees if not 10 during the rest. These should be removed at no more than 135 for medium, 125-130 for medium rare. Quality and taste were fine despite being over done.”

“These were delicious! We made them for Christmas Eve. The meat was tender and flavorful, along with the duxelles. As we like our meat rare, I took the Beef Wellingtons out after 22 minutes. I let them rest, and right before serving them, I put them under a very hot broiler for a minute or 2, to brown the puff pastry.”
