“Use a thermoworks chef alarm thermometer--saves all my roasts and turkeys, etc. I defrosted in refrigerator two full days and baked at 2pm on third day and thought it would be finished in two hours--ours took three hours middle of oven and on rack in roasting pan, a little delay.
