The roast presented beautifully, however, the cooking time was much longer than anticipated. The meat was very dry even though I tented it and covered the tips of the ribs. I would not order this again.

Use a thermoworks chef alarm thermometer--saves all my roasts and turkeys, etc. I defrosted in refrigerator two full days and baked at 2pm on third day and thought it would be finished in two hours--ours took three hours middle of oven and on rack in roasting pan, a little delay. Was moist, flavorful, and devoured by all. Enjoy Enjoy
