“I don’t normally bother reviewing but this was hands down THE BEST beef I’ve ever eaten. And I do a lot of steak. We put it on the barbecue. It was immense. Some thoughts: season thoroughly with sea salt and pepper only and allow to stand at room temperature for a couple of hours. When the coals are white hot (halfway through a bbq session) place on lowest rack possible and sear for 10/15 minutes flipping every 3. Then insert meat thermometer and move rack away from coals 4/5 inches. Baste with butter , garlic, rosemary, thyme and olive oil, and approx 15 minutes later internal temp should be 55’C or slightly higher. Rest for 10 full minutes at room temp. Cut along bone and then slice as usual. Perfection!”
