“I was disappointed with this joint of aitch bone as it looked really good and was cut right out of middle of the topside.I did write to you and ask if all your beef was dry salt aged as your website didn't make it that clear as some of the joints such as steaks and ribs said salt dry age and others just said dry age as did my joint of topside.l didn't receive a reply from you so could you just tell me if you only do some of your beef that way but not all as I initially thought it applied to it all.To get back to the topside I received I cooked it to 48c let it rest for 30 minutes it rose to 59c just nice medium rare and looked really good I then carved it very thinly and then to our disappointment it was quite chewy. As I said in my last e mail I am a retired butcher and I know topside of beef is not the most tender of joints but it should have been better than it was after 28 days hung. I was hoping to order a 4 rib of beef from you for Christmas so would this be dry aged salted.So there you are that's my honest review steak very good but topside chewy so one out of two not to bad.”
