“Professional Chef here and let me tell you this thing is the sharpest knife I’ve ever bought! Holds the edge for weeks barely used a steel to hone the edge. Only wish they offered the 210mm as the blades a bit small for my taste but none the less usually the 1st knife I reach for!!!”
