I knew about how legendary Masamoto Sahoten is but had no clue about Tsukiji which actually has the same symbol. I have a KS Gyuto and love it but have always been a huge fan of Santoku, but their cousin? brand doesn’t offer many of them. After reading about their shop online I remembered seeing them on this site and decided to give them a shot and I LOVE THIS KNIFE. I was hesitant because V1 isn’t a very traditional steel, but it reminds me a lot of Blue2 or Super Blue. Sharpens like butter, isn’t crazy reactive but leaves an elegant patina, and holds an incredible edge. Balance is perfect for a pinch grip but be warned: IT IS ADVERTISED OCTAGONAL BUT ACTUALLY IS A WEDGE D HANDLE: being that I’m left handed that was a huge disappointment but the wedge doesn’t really interfere with my grip. Despite this IM STILL GIVING IT FIVE STARS. Easily the best wa santoku for the money!
