this knife had a good edge when I received it. I thought that it would be harder to sharpen, but it is a dream and only needs fine stones to keep its edge razor sharp. Although I am an amateur chef, I use it every day. For thinly sliced sashimi, I get consistent cuts that are paper thin. This is an excellent knife.
