Great weight, balance is great. Sharpened out of the box, easy to maintain.

Nothing fancy. Forged edge, buffalo horn bolster etc. Matsumoto gives me cleanest cut all the time. All the chef must try masamoto quality.

I didn't have confidence about using a Carbon steel knife but I work at a sushi bar now and felt like it was about time I got a real yanagi. I definitely feel like the blade is more brittle than stainless knives but I've gotten good at sharpening. Overall I'm happy with the purchase but it's only been a couple of weeks so we'll see how it goes.
