“Single bevel and truly high carbon steel takes this knife to the next level of sharpness. The tried and true gyuto shape makes this knife very versatile. It was very sharp right out of the box; usually I sharpen and strop immediately, but no need so far. I wouldn't use a knife this slender to work on thick rind squash, or trimming down a pineapple or for bones - That's not what it's for”
