This is my first personal Japanese knife. This knife is thin and razor sharp. I popped some hairs off my arm when I pulled it out of the box. 30 days later of light use at home slicing onions, cucumbers, tomatoes, zucchini, pineapples, watermelons, dicing cilantro, and other fruits and veggies, this knife is still sharp. I can still fly through the paper test. As for fit and finish, there is some glue hanging from the bolster that did not get cleaned off. There is a minimal step from the mahogany to keyaki handle. The mahogany is slick and well finished. The keyaki has a more matte or natural finish. This does not effect performance, at the moment. The balance is perfect for my hand and grip. The weight is comfortable 139.17 grams. This knife is a great value for a home chef. It has made my time at the cutting board much more enjoyable. That’s worth everything. Other details would not sway me from purchasing more products from Sakai Takayuki.

I can't say anything about the quality of the knife because I bought it as a gift. The recipient's first words were that it is beautiful, very sharp out of the box, and much lighter than his previous all-metal knife. He uses it daily and says it is comfortable, and has made some nice, thin pieces of meat as well as (he claims) thinner cuts of onions. I think it's a beautiful knife, the colors and stamping(?) on the blade look great, and I was proud to have given it as he was happy to receive it.

This is a beautiful knife and it is really sharp. I hope it wears wells. I have already cut beef and deboned a whole chicken. I know it not a boning knife but it did the job perfectly. Also, is a great value for its quality.

Sent this as a gift. Well received. May I suggest providing a message box at time of initial order so that a small greeting to the gift recipient may be included with the purchase.
