The thin profile combined with SG2 steel gives this knife superb performance. If you require sharp and edge retention, this is it.

I got the Takamura R2 Gyuto 210mm to use in my restaurant and it has quickly become my favorite knife to use for cutting vegetables, chicken, beef, and fish. I originally thought this knife would need extra pampering since it's quite thin, but there hasn't been any problems at all as long as you're not attempting to cut bone or frozen ingredients. After using it extensively for the past month it still retains its out-of-the-box sharp edge. Highly recommended for anyone who wants a sharp and thin knife whether in a professional setting or home kitchen.

Very petite knife. Much smaller than my 8 in victorinox. Surprisingly not much thinner. Wood handle shrunken severely. Every metal edge and rivet stood out. Covid or not, shipping took well over a month. Which is ridiculous. 180.00
