I’ve been using this knife in a professional kitchen 5 Or more days a week at this point For 3 years and love it. Does chip relatively easy but they’re easy to grind out, so no big deal. I cut tons of vegetables with this thing for 140 people a day and it’s a dream. Dicing an onion? Fuhgiddaboutit Do yourself a favor and buy this knife and keep it sharp.

A lot of hype surrounds this knife and I always wanted a Takamura so I picked this knife up. Mainly because everything else is sold out! Is this knife worth being more than a Konosuke or Shibata? I would say so. It truly has a unique cutting experience in that the spine is thicker than a Konosuke and definitely a Shibata however, it has an exceptional grind and is very thin behind the edge. I made the mistake of trying to chop onions with the knife. The initial edge is so thin that chopping onions caused the edge to microchip. I fixed the edge with an 8k and some stropping and it still cuts very well but it would be wise to use this knife gently as the seller mentions. Anyway, this knife has an exceptional grind and beautiful aesthetics but I would honestly be satisfied without the aesthetics because the cutting experience is just that wonderful. I would say pick this knife up if you are a collector or avid home cook looking for something unique to add to your collection. Not sure if this knife is for a professional kitchen environment.

Had been waiting for months for one of these to come into the store; couldn't wait for the Gyuto, who knows when one of those will show up! (1) It's a beautiful knife, exceptional workmanship in just about every detail and corner of the knife, and the Damascus finish is just an amazing cherry on top. (2) It's extremely light and very thin, and scary sharp out of the box. Those two things unfortunately make me very hesitant to actually use this knife, which to some extent I realize defeats some of the purpose of buying it. But the couple of times I have used it, it cuts through vegetables like butter. I do plan to use it more often going forward -- though gently -- and am glad I bought it, in large part for the positive feedback I get from having in hand such a striking, handcrafted work of art in my kitchen.
