“Please, don't take me wrong. This Misono is fantastic out of the box. Super sharp. Handles very well. That being said, I think my other Japanese knife is more my style of use. It's handle feels better than this one. It's a completely personal thing. Maybe for you the Misono is the one. Or perhaps it's a matter of time using the UX-10 to enjoy it. The certain thing is: I am gonna keep using both knifes.”
