I have been using this knife for 2 to 2 1/2 hours a day, six days a week since I received it. In that time I have only needed to strop it using a 6K stone to keep the cutting performance. What really surprised me was how well ingredients release from the blade. Combined with the blade profile that favors a push/pull cut, I finish my board work much quicker than before. With the HAP40 edge retention, the blade profile and how well food releases this has become my favorite knife. I will never give up my Nenohi’s but this Sukenari has become my first choice for both work and home.
