This is my first HAP40 steel knife. It feels very sturdy but light. I hope it holds it's edge as it should. Hoped it to be just a bit sharper out of the box though. Will definitely be able to hand this one down to my heirs. Excellent craftmanship.

I am super impressed with this Sukenari 240mm Hap-40 Gyuto! Great for push & pull cuts, and with just enough upward turn of the tip to allow rocking of small herbs. I am finding the k-tip useful for some finer work. Also works beautifully at slicing raw meats -- made beef chow fun last night after thin-slicing tenderloin, and tip slipped under the few pieces of remaining silverskin very easily. Now, I've only used it for a bit over two weeks -- the idea of sharpening 68hrc has me a bit intimidated. I have a set of, both, Shapton GS and Shapton Pro (500 - 6000 grit), that give me good results with all my other blades,but SR2 is the hardest I've sharpened so far. Do you think these should work on HAP-40?
