“It is a beautiful sharp knife. I have carved couple chickens, prepared a Chef's salid, and cut up some meat and liver for jerkey for my dog. I can't comment on on edge holding ability since I have only had it for a week. If it holds up well I have my eyes on 2 or 3 more knives.”
