“The fabrication, fit, and finish of the knife are all impeccable;. It is also visually beautiul. The 40 mm blade depth is really nice, and the balance is comfortable, though it is on the heavy side for a 5 inch knife. On the other side, out of the box it's just not very sharp-about equivalent to the factory edge of well-known European offerings but considerably less sharp than other knives I own, including santokus from Mr. Itou (R2 powder steel core), Kramer (especially the 'stainless Damascus' with a core of SG2 powder steel), and a Takeda gyuto with a core of Aogami Super which is the sharpest knife I own. Just a few minutes with my water stones brought the edge to where it could push cut through a steet of newsprint held at right angles, dice an onion effortlessly, and dice a tough, fibrous serrano chile easily.”
