When it arrived I knew I had made the right choice. It is not only beautiful but also super sharp. I told my son that when the veges I am preparing see me coming with it in hand it sends shivers through one and all of them. I already owned an Ironwood Petty and a Deli knife from New West Knife Works so I was acquainted with the high quality of their products but the Santoku was, in my opinion, a step abobe those two.
