“All other knives will fail in comparison! It is big and bold but light for its size, a joy to handle. The team that crafted it and all of the New West Knives are serious about what they are building. I would only recommend the Kidder for commercial-size kitchens and seriously chef types. You're going to what some extra space and a monster-size cutting board. I would recommend the 8 or the 9 chef knives for day-to-day use. It makes me smile to have it laid out on my station ready for the day's work.”
