Ok this is the best knife I've ever used. I can cut some serious meat with this thing and it is also a great chef's knife. Light and sharp with style. Now I want more.

Got as a gift for my husband who's become an amateur chef. He loves the size, balance and sharpness. The quality is unmatched. Got the wooden handle . Very pleased

Beautiful to hold and use. Cuts like "a hot knife through butter" as the saying goes. We have several other New West knives. This one is the best yet.

This knife is both functional and beautiful. The Santoku design makes chopping and cutting effortless, naturally rolling with wrist motion. The Teton design on the blade is beautiful and makes me think of summers and winters spent in Jackson, adding reminiscence and joy to kitchen work. Truly a wonderful piece!

Beautifully constructed knife! It was far less sharp than I thought it would be straight out of the sheath. After a few weeks of regular use and sharpening on a ceramic hone, it has settled right in.

I would give this a perfect score, but the knives I bought are Christmas gifts and I can't use them. The feel amazing in the hand; sturdy, well balanced and light enough to not cause strain. I'm excited to hear from friends and family how it goes in the long term.

Love it. The balance is really nice, it's sharp out of the box, and the leather scabbard is a nice touch. The design on the blade is very attractive, and the Ironwood is really comfortable and natural in the hand. I'm a home cook, and appreciate good tools that only need to be purchased once. This knife, assuming I don't do something dumb, will be handed down to my grandkids.
