This knife is so good my Culinary instructor asks to use it for butchery demonstrations. It is the sharpest knife in the class and the size, weight, and blade thickness are perfect.

Made in USA is important to me. The blade and handle shape are good, however, cutting edge is really more like 8.5” than 9”. I like the blade geometry and s35vn steel. It came with a decent factory edge; sharp but not like a hand sharpened Japanese blade. The fit and finish should be better for the price. Lots of tool marks on the blade surface. A stonewash or better yet a polish would be appropriate. The handle material is not perfectly flush with the tang. The mosaic pins are cool.

Have been using the knife for several months now and I must say it is an amazing knife. The balance, the weight, the sharpness, the knife is almost perfect. !0" and it would be perfect. A must buy for any kitchen.
