I love your knives but you need to add a Prosciutto carving knife to your line.

Amazing knife - beautifully made, wickedly sharp, hefty without being cumbersome, comfortable to hold. It doesn’t do everything (and I have sense enough not to try) but it is the most versatile kitchen knife I have ever used.

Nice knife. Balanced, light. Ironwood is very nice. I believe Ironwood is is a limited resource. Nice use of the material

Don’t often need such a big knife but when I do, nothing beats the Western Chef. Slice, chop, dice, cut through bone like butter. Great all-around knife.

The blade is simply TOO broad. Otherwise a very nice knife.
