Hi there, you would be happy to know that actually, it's 100% cold-pressed juice- pure celery with a little splash of lemon juice for pH balance and safety (less than 1%). NO WATER is added whatsoever to our celery juice! However, separation is completely natural with raw juices. Celery naturally has a high water content and you'll see this when your juice is settled, so be sure to shake your bottle vigorously before drinking!
