“The pans are thicker than many so they take a little longer to heat but once at cooking temp the heat can be reduced which helps maintain constant and even cooking. The non-stick surface performs well so far as it's only been a month. Other reviewers state the non-stick surface is durable over time. I follow the Scanpan recommendation and use dish soap on a hot pan mixed with a little water to steam off residue and then scrub lightly with a soft scrub pad, rinse and immediately dry with a towel.”
