“We love our dried Hatch red Chile pods medium as they are perfect for making our homemade Carne Adovada. The flavor takes us right back to our New Mexico roots and brings back memories of eating at our favorite restaurants in Chimayo, Santa Fe and Albuquerque. Sadly, the Mexican restaurants in the Pacific Northwest just can't compare so we make our own NM dishes in our kitchen. Thanks to The Hatch Chile Store, we can bring delicious NM meals to our table!”

“After I ordered the red chile pods they were delivered when expected. Living in the TX Hill Country, but coming from NM, we can not find any restaurants that use red chile sauce so I make my own for use in our Mexican food. I have ordered before and I am very pleased with the product I received.”

“The pods were very dark making the chili after processing very dark as well. I was concerned that the pods were not fresh. I have purchased dried red chili pods from another company that were bright red. The chili was a vibrant red when processed.”

Hi Beatrice, Thanks for taking the time to leave us feedback! We can say with 100% certainty that your chile was from the 2022 crop and is fresh when harvested. They go straight from the field to the bag that you receive them in. We allow them to sun-dry for as long as possible which ensures they stay fresher for longer.
