“First I waited past the season to order. Would like a notice from you when it's time to order. All I could get was the chopped, which I didn't think were all that hot, but very tasty.”

Hello Lewis! Yes, we do apologize for the lack of whole, roasted chile this year. We faced some challenges that resulted in us producing more chopped chile than whole. Also, the weather in Southern New Mexico resulted in our chile running a bit milder than usually. Since we do not use any artificial capsaicin, the chemical that gives chile its spice, we have to deal with the chile heat that is given to us. Thankfully, we were still able to provide many, like yourself, with the great taste of chile. We do apologize that it was not the heat you were looking for and we will keep this in mind as we move into growing for this upcoming 2021 season. The safest bet to getting the chile you like is placing a pre-order early in the year. So we typically open up pre-orders around April and May, right before the season starts. “Have ordered chili from them for years no idea why but the hot was not vey hot and it took an awful long time to get...blamed on COVA like everyone does”

Hello Edward! Yes, unfortunately, our chile this year came out milder than usually. The reason is the chile season for us was a bunch of ups and downs! Our farm had to deal with rain and even snowfall during the last part of the season. This resulted in our crop to harvest, roast, and process, which then delayed the shipping process.
