Hello Lewis, I took look at your order and it looks like it was for Medium (Joe Parker) and Hot (Sandia) Roasted Chile, not Big Jim (Medium-Hot). As Joe Parker is a Medium heat variety it will not have the heat or kick that you are most likely use to. I do apologize if there was any confusion. Thanks, Brenden

“We had some issues with the shipping that were out of the company’s control. That didn’t stop them from making the situation right and quickly sending out a replacement package. Excellent customer service and DELICIOUS chilies. We made green chili pork and it was to die for. Next up: green chili tamales. Yum!”

“I look forward to getting my order of Hatch Green Chile’s In late summer. They are so flavorful and tasty! I use them in my favorite appetizers, baked cheese and egg dish with Roasted Green Chile’s. Great on breakfast eggs, quesadillas, and microwaved chips and cheese with salsa.”

“The flavor of this chili is and always has been wonderful. My past orders were as they should be. Unfortunately this time the chopped and cleaned was only chopped. A bit difficult to clean after the fact. In order to prepare the chili for the freeze dryer, I must first thaw it so I can clean all the charred bits of skin from each batch... A bit labor intensive! But as I have said, chili flavor is wonderful.”
