“Just like the fresh Green I got from the Hatch Chile Store earlier this year, the dried red exceeded my expectations. I steam the pods for 20 minutes and then purée them for about 15 minutes. (Add just enough water to make them puréeable) The result is a rich deep red chile sauce that tastes amazing. Freeze the sauce in 4oz. Cups and you will have great red sauce for the next few months. Great products and excellent customer service at The Hatch Chile Store!”

“I've been making red chile enchiladas for Christmas Eve for over 40 years, and this is the first time I was disappointed in the chile. This chile was absolutely tasteless, and had no heat at all!!”
