Hello Rodger, We produce a variety of all-natural chile products, as I'm sure you know. One of the most difficult parts of this process is the fact that we don't add artificial flavors or capsaicin (what makes chile hot) so from season to season there is a lot of variability in heat-levels. Furthermore, people's perceptions of "flavor" and "heat" are drastically different from customer to customer. We are happy to hear the flavor was up to standards!
