“Hello, I have been making my own Hatch Chile Sauce for over thirty years after eating at the Owl Bar in San Antonio while traveling through there, I would buy Chiles while in NM and bring them home and roast them. The last five years I have been retired and not traveling so I have been getting my Chiles from Wegmans during their Hatch Chile days but they don't have any quality control at the point of sale, the last two years the cases were supposed to be medium and they were so hot nobody could eat them, so I ordered a case of your med, sauce and it is delicious! just the right heat and the combination of roasted and fresh chiles is a great idea, the whole family LOVES it, will urchase another case when this one is gone.
