“I love New Mexico red Chile, and usually use my grandmother's recipe to make red chile enchilada sauce from scratch, either from pods or a good quality powdered chile. I was so excited to make enchiladas with the jarred enchilada sauce from The Hatch Chile Store. I am utterly disappointed! This sauce is incredibly watery, and I am very surprised that onion isn't listed as an ingredient because the main flavor is NOT red Chile, it is onion. Horrible flavor and consistency. Don't waste your money if you know what good red Chile is supposed to taste like, because you won't get it! I ordered Medium, but it tasted like Mild.”

Hello Judy! We are sorry to hear of your disappointment with our Hatch Red Chile Sauce. It is made using roasted red chile and then, water, salt, garlic, and citric acid are added. The garlic may be the reason you get an onion taste but rest assured, there is no onion in the sauce. Each jar of chile comes from a batch that is only about a week from being made, which means that the taste varies slightly from batch to batch. This may also be a reason why the garlic taste was stronger. As to this being used an enchiladas, it does depend on how you like your enchilada sauce. Our sauce is a puree so it is catered to those who like a thinner liquid. We do offer other red chile sauces that could be used for enchiladas, which can be used for enchiladas as well. These sauces have a different consistency from the sauce you received. Again, we are sorry to hear of your disappointment. “This red Chile sauce is pretty hot - probably too hot for gringo mouths! Jar needs information on cooking / heating the sauce or a link to your web site on making red enchilada sauce or carne adovada.”

“The hot red sauce was good but not as hot as I expected. Ordered the extra hot also but have not tried yet. Was dissapointed that the price went down fifty cents per can a couple days after I ordered. Will order the fresh chilies in the future.”
