“I ordered fresh Hatch Green Chile in 2020 and roasted it myself in my own roaster. The wonderful smell alone was enough to bring back memories of living in Albuquerque. The chiles were beefy, lots of flesh, great heat level. In 2021, I planted my own peppers from seeds purchased from the Sandia Seed company. Believe it or not, my Hatch chile pepper harvest was excellent! Even though I live in Florida, the plants did very well. My 2022 harvest was very small due to extra hot, dry weather conditions so I decided to supplement by ordering fresh Hatch Chile from your company. Unfortunately, the fresh Hatch Green Chile I purchased recently did not live up to my expectations. Once roasted, the peppers had very thin flesh and because of that, were difficult to peel. The peppers also had so many seeds. Luckily the flavor and heat level are very good. That is why I gave you 3 stars.”

It sounds like the chile arrived in good condition with great flavor and heat level. The thinness of the skin and the amount of seeds in chile are not factors that can be altered. “The service is great, they communicated with me about the shipment and kept me informed, and the 25lbs chiles I received are mostly fine. However, I find the chiles are not as fleshy. After I roasted them, they had barely any flesh left on them, it's mostly skin. They were still tasty but I am very disappointed.”

“The flavors were wonderful. It was delivered fresh and packaged great. My only complaint is I ordered hot and it seemed more mild or maybe medium.”
