They are definitely smaller variety than the big Jim, but they are definitely hotter.

Most of the pods were small, which is time consuming. As a professional chef for over 30 years, I like things that are efficient. Roasting, then peeling a 3-4" pods was tedious. Thankfully, there was a game on TV! There is a touchstone with NM chile (I went through high school and college in NM) that you need to embrace. So many of us move away, fresh Hatch chile is that 'thing' that brings us back, if only in our kitchens. We tell stories, we taste and we explain that state of 'Enchantment.' You have a very special product that requires very special messaging. It's not just a condiment, it's a way of looking at and enjoying Life! Sandia is one of the most flavorful chile peppers grown...grown in the Hatch Valley elevates the pepper even more!
