“Most of the pods were small, which is time consuming. As a professional chef for over 30 years, I like things that are efficient. Roasting, then peeling a 3-4" pods was tedious. Thankfully, there was a game on TV! There is a touchstone with NM chile (I went through high school and college in NM) that you need to embrace. So many of us move away, fresh Hatch chile is that 'thing' that brings us back, if only in our kitchens. We tell stories, we taste and we explain that state of 'Enchantment.' You have a very special product that requires very special messaging. It's not just a condiment, it's a way of looking at and enjoying Life!
