“Whoa, these babies are hot! I prefer the medium heat but hubby likes it hot, so I ordered 5 lbs of both medium and hot this year. Both were very tasty after roasting! A word of caution on the hot. I failed to put on gloves while I was peeling and deseeding the roasted hot ones. Didn’t notice while working with them, but when I was done my right hand was really burning and tingling!! I won’t make that mistake again. The medium heat ones did not bother me while working with them ungloved. They are now in the freezer waiting to be used for future meals”

“I received my Hatch green chili as a Mother’s Day gift. It is especially great for me as we moved to Florida and we just can’t find it here. We roasted the Chili’s, then had chili rellenos with green chili sauce, huevos ranchers, burritos and tamales and a recipe from your website, quiche with green chili and bacon…yum! All and all it is fabulous!”
