“Beautiful, crisp, aromatic. when my husband got home he could tell there was chile cooking. I surprised him with it. Sometimes we just can't afford it. We made a point of ordering chile this year. I ordered the mild, but to my dismay , there was no heat at all in the chile I have prepared so far... Since I was a child there was always Hatch chile in our home. No other chile compares as far as freshness and flavor. My parents being from Albuqueque. We would vacation every August and you could be sure there would be sacks and sacks of chile traveling back home with us. I can literally say: Thanks for the memories. Every time I open a pkg. “Our chili arrived in very good condition with only one bad one in the bottom of the box. The smell while they were grilling brought back so many good memories. Not much heat in them this year and our batch was quite mild. If truly medium, I would have given 5 stars.”

Hi Susan, I would go with the Big Jim in the future if the Joe Parker wasn't hot enough. It's been a mild year for the weather which can cause some variation in heat-level in the milder varieties. Best, Preston

“Fantastic While it seemed daunting to order 25lb the roasting on the BBQ and freezing went very quickly. The chilies arrived nice and fresh, a couple were red but that can be expected when they are fresh picked and packed just for us. I have only been able to get a few of these chilies at one grocery stores around here, it was great to get more than a handful. Love the recipes on their webpage, I have heard you can add these to chocolate chip cookies... Would love a recipe for that”
