“Usually I order Big Jims for roasting. This time I ordered the X-Hot Hatch Chile (Lumbre) for making a pepper mash. The chiles are ground in a food processor, salt is added, and the mixture is put in a crock to ferment for months. The chiles must be fresh and unblemished. Hatch Chile Store chiles were perfect! And, yes, they are quite hot.”
