“The Lumbre chiles arrived one day early. They weren't as fragrant as last year's hot, oddly, but sure acted hot during my processing. High yield! Very little loss of flesh while hand-peeling. A winner!”

“Every time I order Hatch Chili I know I'm getting a good product. The smell is out of this world. And when they're roasting, it only enhances the fragrance. If I roast them in the oven, it makes my entire house smell like nothing else. The X-hot are truly extra hot and they can be used in anything the imagination comes up with. My daughter made some potato salad and put the chilies in it. It had a kick, but the taste was perfect. Even though I live in Alabama now, it takes me home with this familiar smell and taste. :-)”

“OMG! I would of bet money that these green chilies wouldn’t of been hot. Green chilies are just tasty. The X-hot are Xtra HOT! I just ordered another box of medium.(haha) I can handle spicy food, these green chilies are Xtra Xtra hot. We still eat them, made green chili pork soup. Loved them Mandi”

“Love my annual Hatch chile order! I learned my lesson last year and this year I used rubber gloves when chopping up my nuclear treats! No more tears! I don’t roast them but use them a little at a time from the freezer to add that Hatch-tastic zip to my recipes. A little goes a long way and makes a stew or pozole sing. Thanks for being my New Mexico enchantment!”
