“The chiles arrived on a Wednesday morning and were absolutely beautiful. We roasted almost half of them that day, and bagged and froze most of them. But I had to return to work for the next couple of days so we waited to roast the rest. Unfortunately we didn't realize we would have to refrigerate them and most of the remaining batch became spoiled. We salvaged a few more to roast (and freeze) but had to discard the rest. Bummer. We've really enjoyed the few we've eaten so far though. Lesson learned.”

“These chiles are by far the very best in the country! You want hot; you get hot. If you want medium, that’s what you get with just the right amount of kick, which is my preference. To haven’t tried the mild but I’m sure that's what they are. I fell in love with the Joe Parker chiles. The chiles are quite meaty and they make the best rellenos. They make the best enchilada sauce! You won’t be sorry because they are delicious!!”
