“They are very good and fresh considering they were shipped during very hot weather. Questions 1. Can they be put into a zip lock bag and froze as is? 2. One is red in color is it just hotter or did it ripen faster? Not any concerns they taste great, expected them to be a little hotter but will step up on next order!!”

“The Big Jim peppers were excellent. Fresh , firm and full of flavor. Out of five pounds there was one pepper, which was broken in picking, packing or shipping, that had started to get soft in that spot. I used half of it. The rest have been eaten or roasted and frozen. I can't wait for the Sandia and Lumbre to arrive.”

“When the chiles arrived they were firm and we didn't loose a single one. The company kept in good contact so I knew when to be on the look out for the order. By preordering I saved enough to off set the shipping costs. I told my husband I would not move from New Mexico unless I had a chile connection!”

“This ten pound box of Big Jims was the best birthday gift I could've purchased for my partner, mainly because it was just as much a gift that I could enjoy! Some of the chiles have already been turned into a half gallon of green chile sauce (which we already slathered all over pork roast and diced pumpkin), and some I intend to use for breakfast burritos today. And there are still so many left! The flavor of the chiles is wonderful, and they're mild enough to not overwhelm the senses. We are perfectly pleased! Thank you endlessly!”
