“The chile arrived on time and looked (and smelled) great! Kudos for packing and shipping! However, we were disappointed that our medium-hot chile is not hot at all, I don’t think I could even call it medium. Fortunately, this year my local Winn Dixie got in a few boxes of green Chile (from your store) and I was able to buy a box of hot. I think things will work out ok.”

Hi Damon, Big Jim is notoriously inconsistent. You'll probably find some really hot ones mixed in with the milder pods. The genetics make for a nice medium heat when it is all roasted and chopped and blended together. Also, be sure you aren't de-veining the pods as that's where all the heat will be. Enjoy! “Once again an excellent box-full of chilies. They arrived here in interior Alaska as if they were just picked. I only wish we had the huge chili roasters I remember from New Mexico. We had to settle for roasting on our grill under the northern lights.”
