“Great product, great service. We've already had some stew and suffed, and the rest are in the freezer. We here in Wisconsin have a local grower who offerers an acceptable option. But they're smaller and, well, not the real thing. I'll be ordering from you again next year.”

“These chilies are not medium-hot..they are just medium. Also most if the order was not 'green chile', they were orange, yellow and reddish.”

Hi Sandra, Big Jim is notoriously inconsistent and ranges in heat a great deal from pod to pod and year to year. I'm sorry you were unhappy with the heat level. We'd be happy to offer you a free box of our Sandia (Hot) if you'd be willing to cover the shipping on the replacement box. Contact support@hatch-green-chile.com if/when you're ready to take us up on that offer. As to the color, Big Jim is the palest of the varieties we offer. “These chiles are excellent! But I want to compliment the company for their excellent packaging too. The first time I ordered from this store 2 years ago they used frozen gel packs. The chiles arrived almost room temperature. The gel packs just didn't last long enough. Refreezing them did not ruin them however and they turned out to be very good. I notified the Hatch Chile Store of the packaging problem. I am happy to say that they took notice, and this year's order arrived hard frozen packed in dry ice. More than enough dry ice was included. Good Job People ! I will recommend The Hatch Chile Store to anyone.”

“Box arrived and only one chili had any amount of red. We roasted them on the grill, put ‘em in a pan with lid, waited a bit, then peeled, bagged, and froze. But, not without trying some with a bit of cheese. That taste test went super well. Met our idea for medium hot. Looking forward to Relleno casserole. The smell of roasting chili reminds us of our early marriage years in Dona Anna county and biking from Nutt to Hatch. Thanks.”

“We have been roasting chile at home for over 25 years (lived in El Paso and Albuquerque before moving to the Houston area in 2000), experience is not an issue. Ordered from the Hatch Chili Store last year (Big Jim, med-hot) which was perfect. This year we ordered the same (Pre-Order, 25lb. box total of $87.45) and it was mild. Communicated with Support (The Hatch Green Chile Store) and received a complimentary 5lb. offer for $15 (shipping cost) which we declined. We will not be ordering again. Bottom line, we have chile that is not what we ordered and we’re out $87.”
