“Never having bought this chile we opted to go down the middle. I like a little heat and my husband likes a lot. The flavor is out of this world and the heat is perfect. There is a little heat but a heat that has so much flavor. It doesn't linger like some peppers, rather it makes you want to keep eating more. I would hesitate to go to a hotter pepper as the Big Jim was perfect for even my husband's palate and not too much for even mine. I think the milder would be awesome in flavor alone but we did want some heat. Will definitely go with this next year as well.”

“Chilis arrived in great condition - only one bad - last year lost 5 or 6. The Chilis were not as large this year as lasts and seemed to be more curly ones 10 or 12. I've roasted them all and they're in the freezer waiting to make some more great rellenos. I will use the curly ones to make green chilis for cooking. The Big Jim are in my opinion the best - however I have never tried the " Hot " Thanks for allowing me a way to get good chilis in Alabama. Previously I would have a friend who still lived in New Mexico go to Hatch - get them and mail to me, Unfortunately he has passed away.”

“I had them sent to my sister in New York. She roasted some and stuffed some and was so pleased with them it made her homesick.”
